很简单,因为家里实在没啥了,除了土豆就是土豆了…:cn14:

于是做了一个thai potato cakes

我一会儿把这个做法给出来,因为觉得味道不错,呵呵。

一整盘还有小料(小料自己做的,菜谱上说要用sweet chilli sauce,因为Thai style的吗,可是偶搬家之前刚扔了一瓶,因为总也不用。{:5_129:} 结果该用的时候就崩溃了…{:5_147:} )

Here goes the receipe!

Thai potato cakes (I am just copying the receipe from my book, so the preparation time and total cooking time might not be accurate. It depends on different individual. In addtion, the book says that the whole dish can be served for four people; however, the more you make, the more people you can serve, lol!{:5_137:} )

Preparation Time: 20 mins Totall Cooking Time: 25 mins Serves 4

750g boiling potatoes, peeled
1-2 small red chillies, finely chopped
8cm piece lemongrass, white part only, finely chopped
3 very large handfuls coriander leaves, chopped
8 spring onions, chopped
2 eggs, lightly beaten
3 tablespoons plain (all-purpose) flour
oil, for shallow-frying
sweet chilli sauce, for serving

There are only two steps to make it.

  1. Grate the potatoes, then squeeze dry in a tea towel to remove as much moisture as possible. Mix with the chilli, lemongrass, coriander, spring onion, egg and flour.

  2. Heat 1.5 cm of oil in a frying pan. Use 2 heaped tablespoons of mixture to make each cake and cook three or four cakes at a time, for 3-4 mins over medium heat. Turn and cook for another 3 mins, or until crisp and cooked through. Drain on paper towels and keep warm while cooking the remaining mixture. Serve hot with sweet chilli sauce.

My suggestions are:

  1. Grate the potatoes first, and then boil all the pieces in boiling water at the same time. Don’t have to squeeze to get rid of the moisture. I just left them with some moisture, and the moisture makes the cakes softer and not very crispy, which is the way I wanted.

  2. Don’t count the numbers or kgs based on the receipe, just feel them! If you wanna add more flour, eggs, chilli, whatever, you can do it!

Forgot to say, the sauce is made of red chilli oil, balsamic vinegar, sugar, and Lee Kum Kee garlic chilli sauce. -还有香油,忘说了,写个中文吧,比较容易看到。 You can make your own’s too!
